Bean & Feta Salad
Super simple, super quick and super tasty. This fresh tasting, no fuss dish will impress with no mess.
Ingredients (serves 10-12)
800g tin white beans, drained and rinsed
200g red onion, peeled and very finely sliced
600g cherry tomatoes (about 45), washed and quartered
300g feta, cut into 2cm to 3cm chunks
6 tbsp olive oil
6 tsp red wine vinegar
5 tbsp finely chopped parsley (this weighs roughly 25g using 12 sprigs)
Pepper to season (but no salt as the feta is salty)
Gently mix everything together except feta and tomatoes. Gently add in the tomatoes and finally fold in the feta.
Add pepper to taste and serve on side plates.
TIP – For VE & DF, replace feta with red chilli beans or black stoned olives and additional basil (NB: some non-strict DF may be able to tolerate feta)
