Baked Aubergine Tower (V)

This is a simple and tasty vegetarian dish which looks and tastes great (and like it takes far longer to prepare than it actually does!)

 

Serve on a bed of Potaotes Boulangeres (substitute chicken for veg stock) alongside Green Beans, Mange Tout or Roasted Red Peppers for additional colour. 

 

 

Ingredients (serves 1)

3 thick slices of Aubergine                                      ¼ red pepper cut into fine strips
3 thick slices of tomato                                           2 slices of goats cheese or brie
¼ courgette finely sliced                                         1 teaspoon of pesto

 

 

Method

Preheat oven to 180°C
Place sliced vegetables (excluding the tomato) on a baking dish, lightly season and rub with olive oil. Bake in oven for 10 minutes.
Remove from oven and begin to assemble you stack. Start with a slice of aubergine; rub with pesto and place pepper and a slice of goats cheese or brie on top. Place another slice of aubergine on top, rub with pesto and continue the stack alternating the layers using different vegetables.
Carefully place on baking tray using a fish slice and bake in the oven for a further 10 minutes or until veg is tender.
