THE chalet host course teams up with Snow-Camp!

Since 2003 snowsports youth charity Snow-Camp have supported over 5000 inner-city young people through their innovative snowsports based youth programmes. Since 2012, Snow-Camp's London programmes have been running at full capacity, and it is now the charities vision to expand and establish regular programmes running in five new cities within 2 years.


To date, Snow-Camp are delivering programmes across Scotland and have piloted programmes successfully in....

We are proud to announce that OVER 80% of our September students have already had AND accepted JOB OFFERS for this coming winter season!  To be honest, we did have a great bunch of students, so we're pretty confident that there'll be more job offers in the making this week.

For their free afternoon this week, some of the students decided to go rafting with Evo2/Aqua Raft.

The other activities available are canyoning, parapenting, kayaking, hill walking, via ferrata and climbing - to name a few - but rafting has most definitely been the most popular with our students this year.


So, in a week of glorious sunshine, the students set off for Thonon on the one afternoon of rain, with the river in full flow - and they all had an AMAZING time! They talked about it non stop....

Gluten Free Chocolate Brownie - toooooo good!

Gluten free afternoon teas don't have to be any less tasty than the traditional chalet afternoon tea proven by these chocolate brownies that flew off the plate before the GF's could get a look in!!!


They're relatively simple to cook (maybe not as quick as a standard yoghurt cake but they're so good they're definitely worth the little bit of extra time).  The recipe is super simple to follow even for non-foodies.

Hot off the press - Recipe for the amazing (and really quick) Salted Caramel Cheesecake topped with Toasted Almonds

As I promised a few weeks ago - here is the recipe for this season's Salted Caramel Cheesecake.


It took a few tries to get right...but I'm very happy with the result!  


I did have a go at making it healthier (using reduced fat cheese and creme fraiche) but it just didn't hit the spot. The Bastogne biscuits are definitely the best speculoos for the base (I tried three different sorts - plus a mix with digestives!)...I really hope you can get them in the UK....

New fish dish for 2015/16

Of all the fish dishes we've tried and tested this summer - from Jamie's flashy fish stew, to roasted cod with lemon butter - this one came out on top, so it's made it into the main menu plan for this coming season!

We've chosen to serve it accompanied by cheesy herby garlic bread (heart warming, really filling and carb-tastic - just perfect after a hard day on the hill) and the veggie alternative is also a hit and really easy to make alongside...ideal for when you're cooking for a full chalet!....

Goats Cheese Bruschetta with a kick!

Revamped for Season 2015/16!


Goats Cheese Bruschetta has always been a crowd pleasing starter - we've revamped it for the new menu plan (and had great fun testing/tasting).  

With more pressure to deliver food to WOW guests in ever decreasing timescales - this one is most definitely a winner! Try it out!

A Day In The Life...

Being a chalet host is a fabulous opportunity to spend 5 months in the mountains, to meet great new people, to ski or board pretty much daily & of course to really improve your culinary skills.

Every day is a bit different, but most follow a certain pattern. You have got responsibilities to your guests, to your team mates & to your line manager.

Your main tasks will include keeping the chalet clean & tidy & of course preparing delicious meals, this is normally 2 meals a day plus an afternoon tea cake.

Health Warning - Cheese (& Ski Seasons) Can Be Seriously Addictive

When it became apparent that I'd have to start testing out new cheesy products for our French Cheese themed week, I was slightly apprehensive. Don't get me wrong - I love the testing/tasting part of my job (check out the Twitter or FB link)... it was just the 'CHEESE' bit that freaked me out.


To put this into perspective and give you some background - I have a serious weakness for the stuff. I suppose it would be fair to say that I'm a cheese addict...and whilst I've been on the wagon for some....

Top Tips for Job Applications

People continually ask us 'how do I get my dream ski job?'

Well, there are lots of answers to this - here's just some of them:-

No relevant experience - prospective employers do look at all CV's for customer facing experience, i.e. hotel,  bar, restaurant, café, kitchen, shop etc..  We'd suggest getting some part time work in a customer facing environment that fits in with studies.

Make your CV stand out from the 100's of others! Spend some quality time on it and proof....

Dietary Requirements - How the World has changed...

Today's chalet hosts need not only to be able to dish up a culinary feast to compare with restaurant food (whilst cooking for 12 in a kitchen smaller than the one in my 1 bed apartment) - they also need to be able to deal with a wide variety of dietary requirements that just didn't exist when I did my first season hosting at the turn of this century!


In the bygone winter seasons of old, (ie: pre 2005) chalet hosts had been known to cry real tears if the devilish word....

Our courses have run since 2012 and we have had OVER A 90% SUCCESS RATE at finding winter season jobs for our students. Whilst we can't guarantee everyone who attends the course a job, if you have enthusiasm, a willingness to learn and the drive to do a ski season - you will undoubtedly prove yourself during the week and you should go home with at least a job offer or....
