Chalet Host Course Structure
Our courses follow the standard working day/week of a chalet host to prepare you and give you as much of an authentic experience as possible.
Saturday:Arrive before 6pm
Welcome Speech, Icebreakers and Evening Meal
Sunday to Friday:Lessons run from 08:30-13:00 and 14:00-17:00
Breakfast is served from 07:45, lunch at 13:00, evening meal at 20:00
You will also be involved in meal preparation and service on a rota basis over the course of the week.
One morning or afternoon will be set aside for optional activities/French lesson/free time.
Lessons run from 08:00
Departing midday (approximately/flight dependent)
Course Modules include:
- Cooking basics including knife handling skills and chopping techniques
- The art of presentation – making food look impressive!
- Gourmet cooking for large numbers
- Cooking at altitude
- Demonstrations and practical experience – cooking a 6 day menu plan
- Dealing with dietary requirements
- Afternoon tea cakes
- Kid's meals
- Menu planning – various 6 day plans with host manual including all recipes
- Portion control
- Budgeting and purchasing
- Meal service and standards
- Fruit carving & napkin folding
- Level 2 Award in Food Safety and Hygiene
- Level 2 Food Allergy Awareness
- Kitchen health and safety
- CV guidance, and interview training
- Advice on working in the ski industry and how to get the most out of it
- Customer Service – Resort Information Need to Knows
