Our week long courses are ideal for gap year students and also those on a career break looking to work in the ski industry. We give you hands on, practical experience of all aspects of the role of a host so you can walk into the job you want and amaze your guests.
We will provide a fun, learning environment and will give you:
- Confidence in the kitchen
- Knowledge of the art of simple gourmet chalet cookery
- Hosting skills – how to be the perfect host!
- Communication skills
But it’s not all work work work…
Just as you work hard and play hard during your season (loads of hill time) we have the same ethos here at THE chalet host course…
You'll get time off on one morning or afternoon (subject to weather conditions and availability) where we can organise rafting/canyonning etc as a group activity.
Ralph Chatburn –
Ski industry veteran with experience as Head Chef, Chalet Host, Chalet & Resort Manager, Rep and Operations Manager. Ralph has trained hundreds of Chalet Hosts over the years and has been running these specific courses for the last four years.
Cathy Sissens –
A qualified PTTLS trainer, A1 Assessor and Training Manager with over 15 years experience in overseas travel and tourism. Cathy has worked her winters as a Chalet Host, Chalet Chef, Rep and Properties and Operations Manager.
Alex bailey staines –
Alex was a graduate of THE chalet host course in 2016. She is a passionate foodie and hospitality expert with a background in business consultancy, training and motivational coaching.
Alex returned to THE course in 2017, this time to work as a trainer. Her sessions and workshops are designed to accelerate student learning while her experience both as a guest, and provider, of high-end hospitality, means students can really benefit from her extensive knowledge of the high standards, attention to detail, consistency, engagement and diplomacy necessary to maximise guest experience and create the WOW! factor.
Julie Thorburn –
Originally a lawyer (so she had clients then!!) from New Zealand, Julie has worked several ski seasons in Morzine after leaving London life a few years ago. Julie has managed a large ski chalet in central Morzine and hosted and cooked for one of Morzines best chalet companies and, with Sean Gibbons ran a boutique Corsican hotel during the summer. In winter 15/16 Julie used her admin skills in the office of one of Morzines largest & busiest transfer companies.
SEAN GIBBONS –
After a long career in retail management on the front line of customer service in South Africa, New Zealand, Australia & the UK, Sean left it all behind him to 'live the dream' and work ski seasons in Morzine. He has worked as a chalet host and chalet manager, transfer driver delivering guests all over the Northern Alps in his trusty Renault Traffic and managed a boutique Corsican hotel.
TARA NAUGHTON –
Tara was a student on our first course in 2012 and since then has completed seven seasons in the French Alps and is now truly addicted! Being an Irish lass Tara has always had an interest in food but since she began life as a chalet host this interest has gone to a new level. Tara has hosted chalets in Reberty, Les Gets & Morzine as well as working as a Head Chef in a 45 bed chalet hotel. Tara does prefer hosting the smaller more intimate chalets and say's 'it's like being on Come Dine With Me every night!'
Our Chef tutors are experienced industry professionals with several years cheffing in ski. They will demonstrate the full menu plan and will also observe the budding chefs in action, offering tips and hints and ensuring students get to grips with 'cooking at altitude'.
Craig has worked in many prestigious hotels and golf clubs during his many years as a chef serving sports stars, tv & film celebrities and even royalty! Working in the mountains has always been the highlight of his long career in popular resorts such as Val d'Isere, Meribel & Courchevel.
Craig has been responsible for training chefs and chalet hosts for hotels & chalets all over the alps. A highlight of his mountain life was managing a 32 bed luxury chalet in Meribel.

'TOP TIPS' TONY CAVE
After a career in catering management in London Department stores Tony took a career break to work a season in the Alps 2002/3 as a chalet/ski host for Ski Beat in La Plagne. He never went back to the real world and 13 seasons later has worked in several ski resorts for Ski Beat and SnowCrazy as well as tutoring cookery courses in France and UK for Natives...and now also for us! Tony is known throughout the ski industry as 'Top Tips Tony' and we're really pleased to have him on the team as one of our head chefs!!
Jared has always had a passion for cooking and creating!
He started his foodie career working on VIP catering gigs with his best friend Christoff – the most memorable gigs being: the Smiths, G-Star denim urban catwalk shows, various rooftop parties in Regent Street, an £80,000 Southern Comfort promo and the Marmalade magazine launch! Jared then worked as the Senior Chef De Partie in a 4* hotel in Belle Plagne (doing both summer and winter seasons) cooking in a team of 8 chefs for 200+ guests with 9 different dishes every night.
He loves to find tasty and unusual dishes and has eaten in some of the best restaurants in the world including Gordon Ramsey’s flagship London restaurant - although one of his favourite finds was a Mexican street food stall where he had an amazing Taquitos…only after he’d finished did he notice the dead dog by the bin! :-S
‘My philosophy is food can always taste amazing with a little care and passion - whether it be a Ravioli of lobster poached in a light bisque oxalis and wood sorrel, or a bacon sandwich on soft white bread with hot crispy bacon that melts the butter...;D’

'I had a great time on THE chalet host course, I couldn't recommend it more! 'I highly recommend this chalet cookery course. It is run by experienced industry professionals who taught me everything I needed to know to run my chalet, as well as lots of little hints and tips to make my job easier and quicker, ensuring I got as much ski time as possible! Before taking the course I was having difficulty getting a ski season job, my application was just getting lost in the thousands of others being sent to employers. During the course we had interviews from different chalet companies, giving us the opportunity to meet potential employers face to face and even sometimes see the chalet we could be working in. By the end of the week I had a few different offers and was able to choose the position that was right for me. Everybody on my course got a job. I am going into my sixth season now, and still use the little tricks that I learned that week! Thank you for everything!'

‘I attended the chalet host cooking course last year and it was amazing! It was organised really well, and not only did my cooking skills develop tremendously in just one week, we also took part in other activities involving orienteering, team work, fire building and welcome speeches. I am still in contact with friends and tour operators I met on the course, and I would not have been able to get a job as a chalet host in the winter season 14/15 without completing it. 'I wanted to do a ski season but I had never been on a skiing holiday in the Alps before, so to get an idea of how things work I decided to take part in the chalet host course 3 years ago.
This for me and my partner Andy turned out to be the right place and the right time. Our week in Morzine was fun and we learned a lot but more importantly numerous job interviews were arranged for us that resulted in numerous job offers.
A particular job offer from this course eventually grew into a full time position for me and I became a manager of one of the most prestigious hotels in the area. My partner has since set up his own maintenance and carpentry business in the area and we have moved to the Alps permanently.
